Brussels sprouts are a fantastic addition to your veggie dish for several reasons. These mini-cabbages are not only delicious when cooked properly, but they also pack a nutritional punch. They are a great source of vitamins C and K, fiber, and antioxidants. When roasted or sautéed, Brussels sprouts develop a wonderful caramelized flavor that can add depth and texture to your dish.
Here is one of our favorites, baked feta brussels – whether it’s paired with a simple roasted chicken or your fancy Thanksgiving dinner, it will surely be delicious!
What you need:
- 16 oz Brussels sprouts
- 6 oz feta; crumbled
- 2 tbsp balsamic glaze
- 1 tbsp salted butter; melted
- 1 tbsp EVOO
- 2 cloves garlic; minced
- 1 tsp oregano
- 1 tsp paprika
- salt and pepper
What to do:
Trim your Brussels sprouts by cutting off the bottom and cutting each Brussels sprout in half, set aside and preheat your oven to 400 F. Prepare a ceramic baking dish (you can use a baking sheet but it will stick so we suggest using parchment paper) by adding in your melted butter and EVOO. Brush this evenly across your dish. Then add in your feta, again make sure it is evenly distributed in the dish. Then one by one, push down (cut side down) your Brussels sprouts on top of the feta. Then brush the top of the Brussels with EVOO, sprinkle over your seasonings, and bake for about 25 minutes. Remove it from the oven and allow for it to sit for about 5-10 minutes, drizzle the glaze, and enjoy!!
