This is a tremendously simple (only 5 ingredients!) light dessert that is easily put together to handle that chocolate craving.
I made this the other day for guests coming over for dinner. Why? Kind of funny – but I originally made almond flour brownies (recipe included below) for this meal but they turned out dry, so I decided to make a brownie trifle – layered brownies with this chia seed pudding, then a layer of chopped oranges, then a layer of homemade whipped cream with orange zest and repeat. It turned out really good!
What you need:
- 1 can full-fat coconut milk
- ¼ cup + 2 tbsp organic cacao powder
- 4 Tbsp maple syrup or coconut sugar or natural honey (or split half and half)
- 1 tsp vanilla extract
- ¼ cup chia seeds
What to do:
In medium bowl combine all ingredients together and whisk until well combined. Leave the mixture out on counter for at least 15 minutes so that the chia seeds have time to gel. After 15 minutes, whisk again, then cover and place in refrigerator for at least 4 hours and/or overnight. Stir prior to serving. Garnish with your favorite fruit, chocolate shavings, or whipped cream.
And just in case you are curious…here is the recipe for the brownies…
Almond Flour Brownies

- ½ cup almond flour
- 1 tsp baking soda
- ½ tsp kosher salt
- ½ cup almond or peanut butter
- ½ cup coconut sugar
- 1/3 cup honey
- ¼ cup coconut oil, olive oil, or melted butter
- 2 large eggs
- 1 tsp pure vanilla extract
- Sea salt for sprinkling
- Add a little water if the batter seems too thick*
What to do:
Preheat oven to 350. Line an 8×8 pan with parchment paper or grease. In large bowl whisk together cocoa powder, almond flour, baking soda, and salt. In a separate bowl, whisk together almond butter, coconut sugar, honey, oil, eggs, and vanilla until smooth. Add in dry ingredients and stir until just combined. Pour into prepared pan and bake for approximately 22 minutes. Sprinkle with sea salt and allow to cool.
