We have made Greek chicken more times than we can count, and it is always delicious! But this dish is divine – especially with the added touch of the dill sauce.
Salmon is always a great thing to add to your diet!
Salmon provides you with protein and is a well-known source of omega-3 fatty acids. These essential fats are often labeled as “anti-inflammatory,” since they decrease systemic inflammation. The fatty acids, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) can improve functional ability and reduce pain in a myriad of conditions, including osteoarthritis.
What you need:
Salmon
- EVOO
- 4 wild-caught salmon fillets
- 1 tbsp balsamic vinegar
- 1 tbsp lemon juice
- ½ tsp lemon pepper
- ½ tsp dried oregano
- ½ tsp garlic powder
- ½ tsp salt
Dill sauce
- ½ cup organic Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp dill; chopped
- 1 clove garlic; minced
- ½ tbsp lemon juice
- 1 tsp red wine vinegar
- ¼ tsp dried oregano
- ¼ tsp dried parsley
- Salt and pepper to taste
Greek Salad (totally optional but highly recommended as a topper!)
- 1 cup cherry tomatoes; halved
- 1 cup cucumber; chopped
- 3 tbsp kalamata olives
- ¼ cup red onion; chopped
- 2-3 tbsp crumbled feta
- 1/2 -1 jalapeno; minced
- ½ tbsp dill; chopped
- ½ tbsp red wine vinegar
- ½ tbsp lemon juice
- EVOO; drizzled
- Salt and pepper to taste
What to do:
Start by preheating your oven to 400 degrees F. Whisk the EVOO, balsamic, lemon juice, and seasonings, in a baking dish. Add the salmon and turn to coat (I drag the salmon across the dish to coat thoroughly). Line salmon in a single layer and let sit at room temperature while you prepare your Sauce and Salad, let it marinade for about 30 minutes. For the Dill Sauce, whisk all of the ingredients together in a medium bowl and season with salt and pepper to taste. Put into the fridge until you are ready to use. For the salad, combine all of the ingredients in a medium bowl. Cover and refrigerate until ready to use! Bake the salmon at 400 degrees F for approximately 12-15 minutes or until the salmon is cooked through and flakes easily with a fork (cooking time may vary depending on the thickness of the salmon). Serve the salmon with Dill Sauce and salad!
