Garlic is a super food!

Why do we say that? Medical literature reports its high antioxidant levels support effectiveness against immune issues such as viruses and bacterial infections, some cancers, as well cardiovascular disease, high blood pressure, and elevated cholesterol levels.

We love cooking with and eating garlic.

Marion recently roasted an entire large head of garlic that she drizzled with olive oil and a few Mediterranean herbs and placed in a covered dish at 450 degrees for 20 minutes. Then for breakfast she ate a piece of toasted gluten free whole grain bread spread with 5 cloves of roasted garlic, some additional herbs, a little more olive oil, and a little cheese. You may think that sounds odd for breakfast, but for those of us who love savory flavors, it was divine! Nothing like getting a good dose of healing garlic first thing in the AM!

Here are of our favorite garlic loving recipes that are fast and simple to make!

Garlic Green Beans: fresh steamed green beans sauteed with minced fresh garlic, a little organic butter, and salt and pepper. Great simple side dish to accompany many different proteins.

Garlic Shrimp: heat a few Tbsp of olive oil in skillet, add about 1 pound of cleaned and deveined shrimp and cook for about a minute. Season with salt and stir until pink, about another minute. Add 6 cloves minced garlic, a dash of red pepper flakes, and stir another minute. Stir in 4 Tbsp lemon juice, 1 pat butter, and chopped parsley or basil, cooking an additional minute. Reduce heat to low and stir in a couple more pats of butter. Cook until butter melts and sauce thickens. Remove shrimp and continue to cook sauce, adding a few tsp of water to thin it out. Season with salt and pepper. Serve shrimp with sauce on top and garnish with fresh parsley or basil. We love to eat this with cauliflower mash (with some roasted garlic added!)

Chili Garlic Salmon: You can make this Asian-inspired dish with one large piece of salmon (about 2-3 pounds) or separate filets. You can grill outside or on top of stove or in the oven. In a bowl stir together ¼ cup soy sauce, 1 Tbsp chili sauce, 1 Tbsp chopped fresh ginger root, 4 cloves fresh chopped garlic, 1 lime juiced and zested, 1 Tbsp brown sugar and spoon over salmon. Wrap in foil and place on grill (or in oven or in a covered pan on top of stove.) Cook for about 20 minutes. Serve on platter with juices poured over salmon. Garnish with chopped green onion. Serve with rice and/or veggies.
