Spinach and Feta Egg Bites

Studies have shown that eating breakfast can lead to having a lower BMI, consuming less fat throughout the day, and better performance with memory and attention. Just think, you are setting yourself up for success when you eat a healthy breakfast. You are more than likely going to feel satisfied from eating a nutritious breakfast– not needing to nibble throughout the day – something that we often do as it is quick and easy.

Breakfast can sometimes be the hardest meal – you might feel rushed and cooking and sitting down to eat is not just one of your top priorities. But skipping breakfast is not something that you should make a habit.

Here is a recipe for you to try as it can be prepped and stored in the fridge for a few days!

What you need:

  • 1 tbsp EVOO
  • 1 orange bell pepper; diced
  • 1 cup cherry tomatoes; fourthed
  • 1/4 of a large onion; diced
  • 4 cloves garlic; minced
  • 3 cups spinach; chopped
  • 9 eggs, preferably pasture-raised for the best nutrition
  • 1/4 cup milk (you can add more milk if you like your eggs on the creamier side)
  • 1/4-1/2 cup feta cheese
  • salt and pepper to taste

What to do:

Preheat oven to 350 degrees F. Sauté peppers, onion, and garlic until just tender, then toss in tomatoes. Whisk 9 eggs with milk in a bowl with salt and pepper. Place a spoonful of cooked veggies in the bottom of a greased or lined muffin pan, then top with chopped spinach, followed by the egg mixture. Give each muffin cup a small stir to mix up the ingredients. Sprinkle fresh feta on each muffin and bake for about 20 minutes. Enjoy!

One of our favorite things about this recipe is that it doesn’t stop here! You can mix it up by adding different cheeses or meats like bacon, sausage, and ham, along with whatever veggies your heart desires!
