Ok wow! We brought this to our bible study and it was delicious! This is a top-notch dip, for starters the flavor is amazing but it is also super simple to make!
What you need:
- 8oz block feta cheese
- 1/3 cup Greek yogurt
- 1/4 cup lemon juice
- 3 tbsp EVOO
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 bunch of scallions; chopped (stringy tops discarded)
- 3 cloves garlic; minced
- 1/2 cup nuts; chopped small (we used pumpkin seeds)
- 1 tbsp red pepper flakes
- 1/4 cup hot honey
What to do:
In a food processor, add feta, yogurt, lemon juice, and EVOO to a food processor. Scrape down sides as needed, until dip is smooth and fluffy. Add salt and pepper and stir to combine. In a saucepan, heat EVOO over medium-high heat. Add scallions and garlic and cook for 5-6 minutes or until browned. Turn off the heat and set aside. Pour whipped feta into a serving bowl. Top with scallions, garlic, and any remaining oil. Add the nuts, and red pepper flakes, and drizzle hot honey over the top. We served with our homemade toasted sourdough!
