Chilled Watermelon Soup

Chilled soups are delicious and refreshing, especially when the temperatures outside are soaring! This soup makes a lovely starter to a meal. Serve with chilled rose or Prosecco and a delicious green salad. We also like to use cantaloupe, honeydew, and mangoes to make other chilled soups.

What you need:

  • 1 small watermelon, cubed
  • ¼ cup basil leaves
  • ¼ cup mint leaves
  • 1 tbsp EVOO
  • Juice and zest of one lime
  • ½ cup white wine or Prosecco
  • Pinch of sea salt and fresh ground pepper
  • Optional: Pinch of red pepper or cayenne

What to do:

Place watermelon and fresh herbs in a food processor or blender and blitz to puree. You will get about 4 cups of puree. Season with salt, pepper and red pepper. Add lime juice, zest, and wine. Blitz to combine. Refrigerate and serve in chilled bowls with a dollop of crème fraiche and lime garnish.

Chilled soups are a great way to provide guests or even yourselves with a delightful tantalizing treat for the taste buds that is refreshing and healthy, loaded with vitamin C!

Other options:
If you would like to make more of a gazpacho out of this soup recipe, feel free to add finely chopped cucumbers, peppers, tomatoes and onions. I like to puree some of the tomatoes in with the watermelon and herbs to make more of a savory soup. If you like your soup a little thicker and creamier, feel free to add a spoonful of Greek yogurt or crème fraiche to the fruit blender mixture! Enjoy!
