Grilled Herbed Salmon

YUM YUM YUM! Talk about a refreshing, quick and easy meal! This is the perfect spring or summer meal! This can even be made in the oven if you don’t have access to a grill.

What you need:

  • 2 pounds skin-on fresh salmon
  • 3 tbsp EVOO (approximately)
  • 4 lemons; halved and zested
  • 2-4 tbsp of mixed chopped fresh herbs (I like parsley, thyme, tarragon, dill, rosemary, oregano – whatever your preference – mix them up!)
  • 1-2 cloves fresh garlic; minced
  • 1 tsp sea salt
  • ½ tsp fresh ground pepper
  • 1 tsp white balsamic vinegar

What to do:

Mix your EVOO, chopped fresh herbs, garlic, salt, pepper, and the juice of 2 lemons, plus the zest of one together. I like to use a mini-cuisinart to blend well. Add a little white balsamic vinegar and mix. Heat the grill and oil grates – preheating to medium-high heat. Then brush the salmon with herbed olive oil mixture and arrange them skin-sided down on the grill. Flip only once – cooking about 6-8 minutes per side based on thickness of salmon and desired doneness. I like my salmon rare. Note: You can also use a baking sheet or grill/fish grilling pan. Arrange 3 halved lemons on grill, cut sides down and grill until deep golden brown and fragrant, 5-7 minutes. (This is optional, but it sure makes a nice presentation). Transfer your salmon onto a platter with the grilled lemons and drizzle with some more herbed EVOO and serve!
