This is a great way to use your fresh herbs if you do not know what do with them! Combine them all into one delicious marinade! Use what you have on hand! If you do not have any fresh herbs, dried herbs will do! This is definitely a 30 minute meal that can be made very quickly once you arrive home. Fast, easy, delicious, and nutritious!
What you need:
- 4 cloves garlic; minced
- 1 sprig of fresh rosemary leaves
- 1 sprig of fresh thyme leaves
- 1 sprig of fresh tarragon leaves
- 1 sprig of fresh marjoram leaves
- 4 leaves fresh basil
- 1 small bunch of fresh parsley
- Salt/pepper
- About ¼ cup EVOO
- About 1/8 cup of your favorite balsamic (I used peach balasamic in this recipe)
- Zest of one lemon, plus juice
- Chicken (or pork, steak, or fish) 4 servings, cut thinly
- Veggies of your choosing – potatoes, carrots, green beans, onions etc.
- Additional EVOO (or coconut oil), salt/pepper/seasonings
What to do:
Make the marinade by combining all of the above ingredients except chicken and veggies in a small food processor and blend well. Pour it over the meat in a sealed baggie and refrigerate for at least a few hours, for at least 8 hours is better. (I like to make this in the morning, before work, then just cook it up when I get home from work! Preheat the oven to 425 and prepare your marinaded chicken. Take your favorite veggies, cut them up and place them on a baking sheet. I used some Yukon gold potatoes and fresh green beans in this one – but I love using carrots, onions, Brussels sprouts, or just about any veggie. Toss the veggies with a couple tablespoons or so of EVOO, salt/pepper and any other seasonings you like. Place marinated meat on top of the veggies and bake for about 20 (or so) minutes until done *If using soft veggies, you may wish to cook them separately from the meat or they will be overcooked. Top with freshly grated Parmesan cheese if you like!
