We absolutely loved this dish that combined the sweet and savory together into a yummy explosion on our taste buds. We made it with sweet potatoes, sausage, corn, peppers, and feta but feel free to make your own combination. We like topping everything with our favorite “green stuff” which is the olive oil, fresh herbs, garlic, and lemon mixture.
What you need:
- 2 sweet potatoes, peeled and cubed
- 2 Italian sausages (sweet or spicy), casings removed
- 1 medium red onion, sliced
- 2 cups cooked rice (white, brown, or jasmine)
- Olive oil
- Salt and pepper
- Optional: garlic powder, smoked paprika, red pepper flakes
- Veggie Add-Ons: Bell peppers, zucchini, broccoli, cauliflower, spinach, kale, cherry tomatoes, mushrooms, corn, cucumber
- Toppings: chopped parsley, feta, avocado, hot sauce, balsamic glaze, raisins
What to do:
Preheat oven to 425°F. Toss sweet potato cubes with olive oil, salt, pepper, and a pinch of paprika or garlic powder. Roast for 25–30 minutes, flipping halfway. Heat a skillet over medium. Cook sausage, breaking into crumbles. After 4–5 minutes, add red onions. Cook together until sausage is browned and onions are soft (10–12 minutes total). Add additional veggies per your taste and cook for a few more minutes until soft. Assemble the bowls: Layer rice on the bottom, top with sweet potatoes and sausage-onion mix and any other veggies. Add extras like avocado, herbs, feta, and/or hot sauce.
